How to make South Indian style overnight Poha for Summers

But don’t have time to cook an elaborate meal, then try this super healthy and easy-to-make South Indian style overnight Poha recipe, which can be made at home by following some simple steps given below. So, read on and try out this easy overnight meal.

​​Ingredients​

1 ¼ cup thick poha, 1 small onion,1 small tomato, 1 small cucumber, 1 small carrot, 2-3 green chilies, 7-8 small curry leaves, 1/4 cup chopped coriander leaves, 1/4 cup grated coconut, 1 ½ cup curd, 2 tbsp oil, 2 whole red chili, ¼ mustard seeds, ¼ tsp cumin seeds, 1 pinch asafoetida, red chili powder and salt as per taste, 3 tbsp peanuts, ¼ sugar.

​Step 1​

To begin with this easy recipe, lightly wash the poha in water. Strain the water and keep it in a bowl overnight.

Meanwhile, wash and clean the veggies. Chop the veggies and herbs.

Now, take a bowl and add in poha, add 3 tbsp water to soak the poha overnight.

Meanwhile, take a bowl and add in curd, whisk it well and add in sugar along with veggies.

At this stage, add in soaked poha and mix it all together. Meanwhile, heat a pan and add in oil.

Once the oil is hot, add in mustard seeds, cumin seeds, red chili and curry leaves. Let them splutter and add asafoetida, peanuts, red chili powder and salt. Let the tempering turn hot.

Pour the tempering on the poha and mix it well.
