BAKED BEANS

MAKES 10 to 12 SERVINGS

8 slicees bacon

1 cup brown sugar

½ cup apple cider vinegar

1 teaspoon mustard (or more,
if desired)

4 large onions, cut into rings

2 (about 15-ounce) cans green lima beans, drained

1 (about 15-ounce) can yellow lima beans
(or butter beans), drained

1 (about 15-ounce) can dark red kidney beans, drained

1 largest can pork and beans

In large saucepan, fry bacon so it can be crumbled. Remove bacon from drippings and set aside. (When bacon is cool, crumble.)

To drippings, add brown sugar, vinegar, mustard, and onion rings. Cook on low heat 20 minutes, stirring occasionally. To cooked mixture, add green and yellow lima beans, red kidney beans, pork and beans, and bacon crumbles. Pour into casserole dish, cover, and bake for 1 hour at 350 degrees.
