How to Eat Snails and Quails' Eggs

These tiny speckled eggs are usually served hard-boiled in their shells, with celery salt on the side.

Peel off the shell, dip into the salt and eat in a delicate bite or two.

SNails

Usually served by the half dozen and with their shells intact, snails require a little manual dexterity to consume. The chances are that you will have the requisite utensils to hand. Grip the shell with the snail tongs, and remove the meat with the small two-pronged fork. Mopping up the juices with bread is acceptable, but in very formal company (or if in doubt), abstention is safer.
