Alvin Leung

With blue-tinted hair and tattoos, Alvin Leung looks more like a rock star than an esteemed three Michelin star chef. Leung taught himself to cook and isn’t afraid to experiment, using everything from cutting edge molecular gastronomy to the most exotic ingredients to deconstruct traditional Chinese food and create what he calls ‘X-Treme Chinese’. The reputation of the self-named ‘Demon Chef’ has landed him on the TV series MasterChef Canada as the most feared of the three judges. Born in London and raised in Toronto, Leung’s early engineering studies and technical training later informed his high-tech cookery, and he produces Cantonese cuisine with French and Japanese influences. Leung can spend months to perfect a dish, and the menu at his Hong Kong restaurant Bo Innovation occasionally employs shock tactics: one of his most famous dishes is an ‘edible condom’ dish ‘Sex on the Beach’ where the beach is made out of mushrooms and the ‘condom’ filled with honey and ham.
