About

SB_Artifact.png

Saint Bread is a bakery and community space on the Portage Bay waterfront near the University of Washington. Our name comes from the Danish words for true bread--sandt brod--and our playful interpretation nods to Plane Bread, and our belief in tending to something is a sacred act.

Before it was a bakery, 1421 Boat Street was owned by the Jensen family of boatbuilders, and housed the Jensen Motor Boat Company. With a wink and a nod of thanks, we hope to honor their legacy as Saint Bread, with the Jensen Marina Project, and as stewards of the great space they so carefully built with care by hand.

Saint Bread operates with intentional and unwavering commitment to doing what is best for ourselves and our community. Click here to read our full mission statement.

yasuaki saito (he/him) - The Midwestern second son of a German-Alsatian mother and a northern Japanese father, yasuaki is an industry professional who has known the significance of enduring hospitality & the joys of a lovingly prepared meal for his whole life. From nopa & nopalito in San Francisco, to Stumptown & Ava Gene’s in Portland, yasuaki and his wife, Renee, eventually moved to Seattle where he took on the London Plane as operating partner with Katherine Anderson.

An incredibly dedicated and impassioned human being, yasuaki works hard, treats everyone with hospitality and respect, and puts all he has into everything he does.
