Adán Fausto, a chef who has worked for big names including Daniel Boulud, Alain Ducasse, and Thomas Keller, is known in Portland for his erstwhile pop-ups Paradise Mariscos and Tacos con Onda. Following his departure last month from the Submarine Hospitality and Sortis Holdings-backed Los Burros Supremos, which he founded, Fausto plans to bring back a retooled version of his pop-ups, fusing the two into Mariscos con Onda.

The pop-up is anticipated to take over the Pisha-Dufflys’ psychedelic bar the Houston Blacklight beginning in early June. Here, Fausto will serve dishes such as ceviche, seafood cocktails, shrimp flautas, and fried oyster tortas. Mariah Pisha-Duffly told the Oregonian that Fausto is working with Houston Blacklight bartender Em Warden to revamp the cocktail menu so that it’s more in tune with the mariscos menu. For instance, cocktails might be garnished with whole oysters or grilled shrimp, and a mangonada-inspired slushie finished with chamoy is planned.

Local bar owner named Starlight Parade grand marshal

The Portland Rose Festival announced this week that Sports Bra founder Jenny Nguyen will be the grand marshal for the 2024 CareOregon Starlight Parade. “Every year the Rose Festival surveys our partners, supporting and volunteers for suggestions on impactful individuals and ideas worth celebrating as a grand marshal,” festival chief operating officer Nick Brodnicki told the Oregonian. “This year we saw a collective voice rise up around women’s sports and small business. So there was only one choice.” Nguyen founded the Sports Bra, a sports bar that screens exclusively women’s sports games, in 2022. Last month, news broke that Nguyen intends to franchise the bar with an investment from Reddit co-founder and Serena Williams’s husband Alexis Ohanian’s 776 Foundation.

Departure expands its rooftop dining area

The downtown dining destination Departure, located on the 15th floor of the Nines Hotel, has unveiled a new east deck on its rooftop. The space includes an automated pergola, fans, and ceiling heaters, allowing guests to dine al fresco in rain or shine.
