This chicken curry is an easy lunch or dinner that’s great for a gang (and makes enough for leftovers, depending on how many mouths there are to feed in your household). Sometimes I double the recipe, then shred the meat, and toss it through a simple Asian slaw for a fresh and flavoursome lunch.

Ingredients

2 tbsp coconut oil or, duck fat, tallow or other good fat
8 free-range chicken thighs, with bone
*1/4 cup tamari soy sauce
*3 tbsp fish sauce
1/4 cup coconut sugar
1/2 cup white wine
1 tbsp tapioca starch
2 brown onions, sliced  
4 cloves garlic, thinly sliced  
5cm knob ginger, peeled and cut into thin matchsticks (about 80g)
2 tbsp ground turmeric
1 tsp ground coriander
*1 cup chicken stock or water
1 spring onion, cut into 5cm batons and julienned
2 bunches Chinese broccoli, trimmed and chopped in half
1 tbsp  olive oil
2 limes, cut in half, to serve

* check sauces and stock are gluten-free if required

Method

1. In a large, deep frying pan or casserole dish heat coconut oil over a medium to high heat. Season the chicken with salt and pepper. When  the pan is hot, add the chicken thighs in batches, skin-side down and cook until golden, about three minutes. Remove the chicken from the pan and set aside.

2. In a bowl, mix the tamari, fish sauce, coconut sugar, wine, chicken stock and tapioca to combine  and set aside.

3. Reduce the heat of the frying pan to medium, add the onions and saute for four minutes or until translucent. Add the garlic, ginger, spices and cook for one minute until fragrant. Pour in the stock mixture,  then return the chicken thighs to the pan, sprinkle over the spring onion and season with some pepper.

4.Turn the heat down to low, cover with a lid and slowly simmer for 45 minutes, basting the chicken with the sauce occasionally. Add a little salt if needed.
 

5. Bring a large saucepan of salted water to the boil. Add the Chinese broccoli and cook for two minutes or until tender. Drain and shake off any excess water. Drizzle over some olive oil and  salt if needed.
 

6. Divide the greens between four plates. Portion the chicken, ladle over some sauce and serve with a side of rice* and lime.

  • Hmm - an "Indian" curry without chillies of any kind and with soy sauce and wine. Interesting. Must be from a region of India I've missed.

    • Yep should have read more carefully but the same goes for Burmese. Worse in fact, as burmese curries often use sesame oil and are nothing like what's described here.Where's the coconut milk?
